BMI is a statistic that works for a population that is unhealthy.
The data points would be completely preposterous if men were fit again.
For ex, I'm 6'1 200lbs, that puts me at 26 which is closer to obese than normal weight.
My waist size is 32 with a belt.
The weight of my skeleton & muscle mass from training my whole life throw this metric into the waste bin.

Going to aim for about 10 hours of total cook time, probably starting it at 200-225F for the first 4-5 hours, then wrapping it for 4-5 hours.
