I taught myself how to cook linguine using the shallow pan technique tonight. Wish I’d figured this out years ago. It’s so much better than boiling it in a huge pot of water. You don’t even need to drain the water, since it mostly evaporates during cooking, leaving behind the starch. Just scoop the pasta into a bowl and serve it any way you want. Can be a simple cacio e pepe, a cream sauce, or whatever you like.
