I love rice pudding.
2 cups whole milk
1/4 cup white rice
1/2 cup sugar or honey
Cinnamon to taste
Dash or two of salt
Combine and simmer, covered for 1.5-2 hours
You can stop here and have a good rice pudding.
Or
Take another 1/2 cup milk and whisk in 1 egg. Temper this mixture with 1 cup of the cooked rice pudding. Add the tempered mixture slowly back into the rice pudding while stirring. Bring the resulting mixture just to a boil, then let simmer, uncovered, until slightly thickened.
Let that sit for 20 minutes and you have the best rice pudding ever 😙👌
