The signs at the local supermarket label this as "novilho" which i am pretty sure means veal:
oh, so, ok, novilho can mean both calf and neutered male adult (bullock)
well, there's a world of difference between these two things
anyhow, same same, as far as i'm concerned, but this here looks like marbling, it's a cut from the center-back of a cow, the part right near the rear is similar, and popular in brazil under the name "picanha" which is "rump steak" apparently... but all the pictures i see of picanha look like this:
which is how this slab looks, except maybe the fat layer isn't quite as thick, but in principle, it's the layer above the ribs beside the spine
anyhow, point i was digging at is, that looks like some nice marbling there, not amazing, but not terrible, like the beast was let to run its minimum 18 months to be considered Beef by english speaking country standards
