8.5 hours in. Internal temp got to 161F but we pulled it early because we have an early ass flight. Now we enter the wrapped stage. Flipped the fat cap to the topside and threw in a half can of Krombacher beer and a stick of butter (yes, I know aluminum foil is fiat as fuck but I forgot to get butcher paper).
It’s back in the smoker now. Internal temp at 170F and the smoker is at 300F. Wouldn’t be running the smoker this hot but it’s cold as shit outside and it feels right. Only time will tell… #foodstr
7.5 hours in. Bark coming along nicely. Internal temp 156F. Cold as shit outside so bumped up the smoker to 285F so I can get the internal up to 165. Just feeling it out. #foodstr
