8.5 hours in. Internal temp got to 161F but we pulled it early because we have an early ass flight. Now we enter the wrapped stage. Flipped the fat cap to the topside and threw in a half can of Krombacher beer and a stick of butter (yes, I know aluminum foil is fiat as fuck but I forgot to get butcher paper).
It’s back in the smoker now. Internal temp at 170F and the smoker is at 300F. Wouldn’t be running the smoker this hot but it’s cold as shit outside and it feels right. Only time will tell… #foodstr
